Roasted Chickpeas

Every once in a while I just need a good pick me up during the day and I can’t think of a better way than to eat something packed full of protein and vitamins. Today I was heading out for a picnic with my daughter and my husband and before we left I took 40 minutes and I made this snack and also a quinoa salad.

Rinse and drain one can of chickpeas/garbanzo beans.

Dry with paper towel.

Place beans on a small cookie sheet drizzled with 3 tablespoons of olive oil sprinkled with salt.

Bake at 450° for approximately 30 minutes or until the beans look brown.

Remove beans to a paper towel to remove any excess oil.

Place in a small bowl sprinkle with a tiny bit more salt and enjoy!
