Bruschetta -Caper, Tomato, Basil, Mozzarella

Bruschetta is such a yummy dinner, lunch, or appetizer. When I am at home and I feel a carb craving coming on or just want to have a living room picnic with my husband over a bottle of wine, bruschetta is a fun and satisfying menu choice.

Bruschetta Sauce (Serves 4 to 5)

5 Tbs. Capers

7 Roma Tomatos Diced

2 Handfulls of Basil, chopped

1 Tbsp. Balsamic Vinegar

3 Tbsp. Extra Virgin Olive Oil (cold pressed preferred)

*Mix all ingredients in a bowl, add salt to taste

*Note: Kalmata olives also taste good in this but with the capers, can be a little salty

2 loaves french baguette bread, sliced into 1/2 oval pieces (perfect size for picking up with your hands)

*Drizzle with olive oil or spray with cooking spray and toast in the oven until toasted (not too brown)

To assemble:  On top of the flat, toasted bread, add 1 slice of soft mozzarella cheese (I like the Ovaline size and buy 2 packages) top with the bruschetta sauce and enjoy!

Yes, it is that easy!
