Sometimes I feel like breakfast for dinner. I am a huge fan of the “fried” or poached egg and always try to find ways to make healthy, hearty and tasty egg dishes.
2 TBSP. Olive Oil
1 Medium Diced White Onion
Firm Spanish Chorizo Sausage (Healthier Option, Turkey Polska Kielbaska Sausage) sliced into bite size pieces
2 cloves chopped garlic
1 28oz. can of chopped tomatoes drained
1 tsp. smoked paprika
1 tsp. salt
2 eggs per person
1 Cup shredded potatoes
4-5 Tbsp. manchego cheese
In a sauce pan add olive oil and diced onion. Sautee for 5 min. Add chopped garlic and sausage and cook for 5 more minutes. Set aside.
In individual baking dishes, spray with cooking spray, add a light layer of potatoes. Next, add 3 TBSP. tomatoes . Next, top with 3-4 Tbsp. of the onion and sausage mixture. Finally crack 2 eggs in each baking dish. Sprinkle lightly with salt and 1 Tbsp. manchego cheese.
Bake at 400 degrees for 8-10minutes. You want the egg yolks to still be runny.
*Serve with grilled corn tortillas and sliced avocado
