Quinoa & Romaine Greek-ish Salad with Tahini Orange Ginger Dressing. ~ Young and Raw
1 Head of Romaine Lettuce, chopped
1 Small handful of Basil, chopped *optional
1 Small Cucumber, sliced
1 Small handful of Kalamata Olives, pitted
1 Carrot, shredded
1/2 Avocado, sliced
Instructions: Chop your lettuce and veggies, shred your carrots and combine together in a bowl with dressing. Toss and set over a bed of cooked or sprouted quinoa.
Tahini Orange Dressing:
1/2 Cup Tahini (raw and organic)
4 Oranges, juiced
3 Dates, pitted
2 inch piece of ginger (about a thumb size or more)
Instructions: Blend until smoothie and enjoy! Can store in a glass jar in the fridge for 2-3 days and use again for future salads or lettuce wraps.
